Recipe from Courtney Tissiere, bartender, Swig Martini Bar, San Antonio.

Mrs. Top Gun Loves this drink, and it happens to be from one of the Top Gun's fave Riverwalk hang outs in San Antonio. I stumbled upon the recipe in this months issue of Texas Monthly, which features a section of Texas drinks for the summer.

Here is the recipe:
1/4 cucumber
5 fresh mint leaves, plus
1 sprig for garnish
2 lime wedges
2 sugar cubes
2 ounces simple syrup (one part sugar dissolved in one part water)
splash of fresh lime juice
1 1/2 ounces Tito’s Handmade Vodka *This is a 12 year aged TEXAS Vodka, so feel free to substitute your favorite if you can't find Tito's*
splash of club soda

Muddle cucumber, mint leaves, 1 lime wedge, and sugar cubes with simple syrup and lime juice. Add vodka and shake with ice. Strain all ingredients into a sugar-rimmed martini glass and top with club soda. Garnish with remaining lime wedge and mint sprig.
